Mix and match brunch waffles

Ingredients
- 250g plain flour
- 1 tsp baking powder
- 25g golden caster sugar
- 2 eggs, beaten
- 475ml whole milk
- 2 tbsp groundnut oil, plus extra for the waffle iron
TOPPINGS
- dry-cured streaky bacon rashers, grilled until crisp
- fried eggs
- avocado slices
- chopped chives
- sliced bananas
- maple syrup
- chocolate sauce
- double cream, softly whipped with 1-2 tbsp of icing sugar
- toasted pecans
Method
- STEP 1
Put all the dry ingredients into a bowl with ½ tsp salt. Mix the eggs, milk and oil in a jug. Gradually mix the wet into the dry ingredients to make a batter.
- STEP 2
Brush a waffle iron lightly with oil (or use spray oil if you have it). Pour the batter into the waffle iron and cook for 4-5 minutes until golden and cooked through. Repeat with the remaining batter. Let everyone choose their own toppings.
