Smashed avocado on toast

Ingredients
- 4 plum tomatoes, halved
- 4 thin slices wholegrain or sourdough bread
- 1 small avocado, peeled and stoned
- ½ lemon, juiced
- a pinch cayenne pepper
- a handful to serve cress or baby rocket leaves
Method
- STEP 1
Grill the tomatoes for 20 minutes until soft. Toast the bread. Using a fork, mash the avocado with lemon juice and cayenne, then spread it over the toasted bread. Top with the tomatoes and some cress or baby rocket leaves.
