Green tomato spicy marg

Ingredients
- 50ml tequila (such as El Rayo)
- 30ml green tomato consommé, defrosted (see below)
- 15ml lime juice
- 10ml agave syrup
CONSOMMÉ
- 5 large green tomatoes, roughly chopped (you can usually find these online)
- 100g ginger, peeled and roughly chopped
- 3 jalapeños, roughly chopped (add more to increase the spice level), plus a sliver to garnish
- 1 tsp coriander seeds, crushed
- large pinch of crushed black pepper
- bunch of coriander, chopped
- 1 tsp salt
Method
- STEP 1
Tip all the ingredients for the consommé into a blender and pulse into a purée. Strain through a fine sieve or muslin cloth – you could use a coffee filter if you want extra clarity. Keep chilled or freeze in 30ml portions.
- STEP 2
To serve, chill a glass. Pour the cocktail ingredients into a shaker with ice, shake well and strain into the glass. Garnish with a sliver of jalapeño to serve.
