Cherry and pistachio no bake traybake

Ingredients
- 500g white chocolate, chopped
- 2 tbsp coconut oil or white vegetable fat or crisco
- 60g dried cherries
- 150g red glace cherries, quartered
- 100g blanched almonds, roughly chopped
- 100g shelled and peeled pistachios, roughly chopped
- 6 tbsp rice crispies
- 8 large marshmallows, snipped into quarters
Method
- STEP 1
Melt the chocolate and fat together in a microwave or bowl set over a pan of simmering water. Stir in the remaining ingredients. Scoop the mixture into a baking paper-lined 20cm square tin or baking dish (or use a silicone mould).
- STEP 2
Leave in a cool place or in the fridge to set. Cut into pieces to serve.
